Yea mod the crap out of it. The 64bit SE VR version can take a ton of mods without issue. I have 31 mods and most of the major popular large mods without any issues. Only one ctd in 10 hours of playtime. A few INI tweaks can really help a few small things also.

Well the PC VR version of Skyrim has only been out 3 days and it’s a miracle that any mod works with it.
I remember the gnashing of teeth in the modding community that occurred when Skyrim SE was first released.
This release seems to be going much smoother than that one for mods.
