I recommend Assetto Corsa Content Manager. It’s especially great for easily adding all the super free cars and tracks etc.

What are the benefits of Ultimate edition?
That would depend on one’s need to have the extra content included in those packs, I would think. Well worth the extra $4, I’d say.

Was not AC replaced by ACC? Or was it rather a sidestep?

That too, is on sale so one could throw down another $10 and go that route or get both if enthusiastic enough.
I spend most of my racing time in DR2 ,so I have even way more content in AC than I ever get around to using. Personally, I really only spend time in a Williams W31 S1 from VRS that so closely approximates the feel (imo) of the Williams F1 in IRacing (which was created in cooperation with Williams) that I cancelled my IRacing account a few years back.
I can’t understand why my friends can’t understand the pain of having too much to play and not hours in the day. 
Yes but performance of AC is much better IIRC.
I own both games but have only gotten around to test ACC
